• Grape variety: 90 % Sangiovese, 10% Merlot
• Colour: ruby- red with granat reflexes
• Scent: intense, soft fruits bouquet, especially blackberry and raspberry. Delicate and agreeably notes which reminds cinnamon and vanilla flavour due to barriques aging. It is a wine telling straightaway all distinctive elements of its region.
• Taste: full structure. When tasted, it expands gently and spontaneous. The tannins aren’t aggressive at all and are sweet and velvety. It has both a quite long persistent aroma, and a clear correspondency between scent and taste
• Town of production: Castelnuovo B.ga (SI).
• Food Combinations: wild boar, red braised meats, seasoned cheese, cooked cold meats. Tuscany Cooking: jugged hare, wild boar with Bolognese sauce, stuffed porc, stewed kid wit potato and long seasoned Pecorino Cheese of Pienza.
